Some time ago, I found some blue-violet potatoes called "Vitelotte", cultivated in France. Compared to the "normal" potatoes, they are quite small and have a thicker skin. I was really excited to process them as I never used them before and only knew them as crisps.
As I did not have time to make anything complicated, I decided to make some easy oven truffle potatoe slices. They are definitely an eyecatcher for any dish and taste great! :)

some olive oil
salt and pepper
1.) preheat the oven to 170°
2.) wash the potoatoes
3.) cut them into about 3mm slices
4.) put the slices on baking paper
5.) drizzle with some olive oil and season with some salt and pepper
6.) put into the oven for about 12minutes
7.) serve with some garlic sauce or enjoy plain as a snack or side dish.
Serve as a side dish or have them as a snack :)
